The hops are dried in stages until their moisture content is down to 10%.  Each drying stage is above the next so you just shovel the cones over the edge to the next one. Finally, the hops are bagged in compressed bales for shipment to the brewery.  The 2004 harvest was good in quantity and in alpha acids.
